The hash browns are very easy to make and it is best to eat them immediately. They taste fresh best. If you like it extra crispy, use only 20 g of flour and add 3 tbsp of rolled oats.

servings

We always eat them with apple sauce or herb sour cream. But it also goes well with plum compote, horseradish cream or a healthy green salad.Hash browns

1 kg of floury potatoes
1 shallot
2 eggs
40 g of flour
salt
pepper
Sour cream
250 g sour cream

Frying oil, sunflower oil or olive oil
Applesauce

Peel, wash and roughly grate potatoes on a grater. Chop the shallot very finely. Put in a bowl with the remaining ingredients and stir well.
Heat the oil in a large pan. Put the potato mixture in tablespoons into the pan, shape it a little round and immediately flatten it. Fry for approx. 5 minutes on both sides until golden brown. Remove from the pan and drain on a plate with kitchen paper.
Serve the potato pancakes immediately and serve with quark or apple sauce.

Notes

Vegan baked hash browns
Grate potatoes, finely chop the shallot. Place in a bowl with salt and pepper, mix and let stand. After 10 minutes, pour the mixture into a clean cloth and squeeze all liquid out. Save the liquid. Pour the water away and keep the remaining starch.
Mix the mass and starch. Heat the oil in a pan and fry the hash browns until golden brown.
