Banana Pancakes with berry compote

This post is also available in german/deutsch.banana pancakeSunday is pancake day. You have time and breakfast together with your loved one, without the hectic stress it gives during the week. These banana Pancakes are ideal for this and children also love to decorate them and stack them on top of each other. And they are made entirely without sugar. You only need a ripe banana, flour baking powder, nut or plant milk.

Banana pancakes

1 ripe banana, mashed
200 ml almond milk
120 g flour
1 tsp baking powder

Whisk all ingredients in a large bowl. Pour into a non-stick pan and fry the pancakes on medium head until golden.
Top with berry compote, tahini drizzle and coconut rasp.

For the berry compote:

Add 1 cup of frozen berries in a small saucepan and slowly simmer, add 1-2 tbsp lemon or orange juice. Stir again and then allow to cool slightly.
