This post is also available in german/deutsch.apple pudding cakeThis delicious and beautiful Apple pudding cake with cinnamon whipped cream will make any coffee table shine. Moist, crispy and creamy. The base is made with delicious spelt flour and the filling with apples and custard. You can also make the cake with pears, just make sure that they are tight, otherwise they will mash when cooking.

The best apple for cooking is a firm but not too juicy apple, like a boskop, jonagold, gala or elstar. Cooking apples are best suited because they develop their full aroma only when heated.

spelt base
125 g spelt flour
1/2 tsp baking powder
35 g of brown sugar
65 g of butter
2 tbsp cold water
apple filling
500 g apples (Elstar, Boskop, Gala)
2-3 tbsp sugar
1 tsp vanilla extract
60 ml apple juice (without added sugar)
125 ml of water
1/2 packet of vanilla custard powder (vegan)
cinnamon whipped cream
200 ml vegan whipped cream
1 tsp cinnamon
1/4 tsp cornstarch
If you like add 1 tsp powdered sugar
also
2 – 3 tbsp almond flakes
1 cake ring
20 cm springform

Preheat the oven to 180 ° C. Grease the springform pan and cover the bottom with baking paper.
Put all ingredients for the base in a bowl and knead. Put the dough in the springform pan and press firmly on the bottom. Bake in the oven for 15 minutes. Allow to cool for 10 minutes, then remove from the springform and cool completely.
Put the base on a plate and put a cake ring on it.
For the filling, peel the apples, remove the seeds and cut into slices. Put the apples with sugar, vanilla extract, apple juice and water in a saucepan and bring to a boil. Mix custard powder with 5 tbsp of water until smooth and pour into the boiling apple liquid. Bring to a boil with gentle stirring.
Allow the apple mass to cool slightly and then pour over the base, smooth it out and let the cake firm in the fridge overnight.
On the next day, gently remove the cake ring.
For the whipped cream beat the vegan whipped cream with cinnamon and cornstarch until stiff. Spread the cinnamon whipped cream on the cake.
Add almond slices in a frying pan and roast until golden brown. Let them cool completely then sprinkle over the cake for serving.

Ingredients

spelt base
