Vegetable potstickers with soy sauce dip

This post is also available in german/deutsch.Crunchy and delicious vegetable potstickers! You don’t need any special equipment for these dumplings, just a larger pan with a lid.

Dumpling dough

You can get real to use dumpling dough in the Asia shop or you can make it yourself. It’s super easy too. You can find the recipe HERE. This consists only of water, flour and a little oil. Very good if you are in the mood for potstickers on Sundays and the shops are closed.

FILLING

You can of course add some ingredients to the filling. eg. some tofu, cucumber, peas, chilli ect. The filling in the recipe is enough for about 25-30 potstickers.

FRY VEGETABLES POTSTICKERS

Pay attention to the potstickers when frying. The sesame seeds turn brown pretty crispy. Add about 50 ml of water, not too much otherwise, the sesame seeds will become soft and no longer crispy and add the lid very quickly. We need the steam to cook the dough. Here you can switch off the hob, the rest of the heat cooks it through. Start on induction cookers at medium to low settings. After 3-5 minutes you are done! Yummy !!

VEGETABLE POTSTICKERS

1 packet of Dumpling batter (≈30 pieces)
2 cloves of garlic, finely chopped
2 spring onions, finely chopped
1 carrot, finely diced
5 Chinese cabbage leaves, cut into fine strips
1 piece of ginger, chopped
1 bunch of coriander, chopped
3 tbsp soy sauce

large pan with lid

Fry onions, ginger and garlic in oil. Add carrots and Chinese cabbage and sauté for 5 minutes. Add soy sauce and coriander and sauté briefly. Take off the stove.

Put oil in one of the frying pan. Put sesame seeds on a plate, provide a brush and a bowl of water. Put some cornstarch on a plate.
Remove the dough from the packaging and place one teaspoon of the filling in the middle.
Moisten the edge with water. Fold the dough together and press the edges firmly together. Fold in the edge often.
Put the dumplings on the starch and continue until all the filling is used up.

Heat the pan on medium heat. Use a brush to dampen the underside of the dumplings with a little water and press them into sesame. Put the sesame seeds down in the hot pan. If the bottom is nice and crispy, it goes pretty quickly. Put about 50 ml of water in the pan and quickly put the lid on it. Be careful not to get too close to the pan as hot steam rises!
Cook the dumplings in the hot steam for 5 minutes.
Take out and enjoy hot with sauce.

Soy sauce
50 ml sesame oil
2 tbsp soy sauce
2 tbsp maple syrup
2 tbsp chilli sauce
fresh ginger, grated

These crispy vegetable potstickers are so tasty and going easier than they might look. Filled with vegetables or tofu. Vegan.
