Green Minestrone (v)

I love soups!! If you want to make me happy, serve me a big bowl of soup. Like my green minestrone. Packed with lots of vegetables and filling carbohydrates.

INGREDIENTs FOR GREEN MINESTRONE

olive oil
3 garlic cloves, finely chopped
1 onion, chopped
1 bunch of broccoli (about 500g), florets
5 green beans, cut
4-5 sticks of celery, finely chopped
180 g white beans, canned rinsed
80 g frozen peas, thawed
1 liter vegetable broth
200 g of pasta

METHOD

Cook noodles according to the package instructions al dente. Put aside.
Heat oil in a large saucepan. Sauté garlic, onions and celery for 5 minutes while stirring.
Deglaze with the broth. Add remaining vegetables and cook gently for 5-8 minutes.
Season with salt and pepper. Add pasta and serve the minestrone in plates season with parmesan or cheese substitute.

Ingredients

  • olive oil
