Spelt pasta with flowers and herbs. Simply handmade and so delicious! With this recipe you can make the perfect pasta dough.

400gspelt flour
4eggs
2tspof olive oil

Sage leaves

Instructions
Put the flour on a work surface and make a hollow in the middle.
Beat the eggs and add them to the bowl with the oil. Knead the flour from the edge, starting with the eggs and the oil, until you get a homogeneous dough.
Knead vigorously for 5-10 minutes. If it is too dry, add a little olive oil. If it is too moist, tie it with some flour. In both procedures, apply sparingly. After kneading, wrap in cling film and let it rest in the fridge for at least 1 hour.
Divide the dough into 3-4 pieces and roll it out on a lightly floured work surface or with a pasta machine.
Remove the stems from the herbs and flowers and place on half of the dough. Place the second half of the dough on top and press firmly. If you moisten the edge, make sure that it's just a hint, otherwise the dough will start to stick. Then turn the dough through the pasta machine again. Now cut into tagiatelle or ribbon pasta as desired. Dust the finished pasta immediately with a little flour and roll in it so that they do not stick together.
Cook al dente in plenty of salted water. Drain and serve with sauce or pesto.
You can also leave out the herbs or flowers.
Notes
Without egg
400 g spelt flour
250 ml waterMix flour with water and knead into a smooth dough. Knead until the dough no longer sticks (5-10 minutes). The longer the better the result.
Wrap in cling film and proceed as described above.
