Cook rice noodles according to the package instructions. Drain and place in a bowl. Cut carrots, cucumbers and red peppers into thin strips. Cut medium hot peppers into thin rings. Mix vegetables with the rice noodles.
Peanut butter sauce
Put all ingredients in a bowl and stir well

Mix all ingredients in a small bowl.
Prepare
Mix rice noodle salad with peanut butter sauce and serve on plates.
Garnish with peanuts and more coriander and drizzle with the dressing.
