Ingredients
1can of chickpeas400g and drained weight 250g
140gdark chocolate
2tbspsugaroptional
Instructions
First, put the chopped chocolate in a small bowl and let it melt in the microwave or above the water bath. Stir with a spoon and set aside.
Now you put the chickpeas in a sieve and catch the chickpea water in a large measuring cup.
Make sure that the bowl / measuring cup and the whisk are fat-free. If not, the Aquafaba will not open properly.
Mix Aquafaba and sugar (optional) with a hand mixer or in the food processor until the mixture is very stiff and you can use it to make sharp points. It takes about 5 minutes in the blender and 8-10 minutes with the hand blender.
Now lift the slightly chilled chocolate under the whipped mixture. Do not worry, it's normal when the mass collapses.
Divide the chocolate mousse into 3 glasses and leave to set in the fridge for 2 hours or overnight.
Serve with (coconut) whipped cream, raspberries and pistachios before serving.
