Egg Free Banana Chocolate Muffins

Moist and fluffy banana chocolate muffins. egg free and healthy. And so easy.

Ingredients

  • 250 g self raising flour
  • 125 g spelt flour
  • 3 tbsp cocoa powder
  • 3 mashed bananas
  • 1 tbsp peanut butter
  • 120 ml vegetable oil
  • 220 ml oat or coconut milk
  • 3-4 tbsp coconut sugar
  • 1 tsp cinnamon
  • 1/2 tsp gingerbread powder
  • 60 g dark chocolate chunks
  • Mix 1 tbsp baking soda with 1 tbsp vinegar egg replacement

Instructions

  • Preheat the oven to 180 °C. Line muffin tins with paper cases.
  • Place flour, cocoa powder, cinnamon, gingerbread and sugar in a bowl and mix to combine.
  • Mix banana with peanut butter.
  • Add milk, oil, banana, chocolate and egg replacement, and mix until just combined.
  • Spoon the mixture into the tins and bake for 25 minutes.
  • Allow cool in the tins and transferring onto wire racks.

Notes

  • If you want to make a banana bread add the dough in a baking tin form.
  • Bake for 30-40 minutes
