Ingredients

rolled oats

mixed nuts
I used almonds and pecan

quinoa flakes

tsp
ground cinnamon

pumpkin seeds

salt

pure maple syrup

tbsp
rice sirup

cup
melted coconut oil

tsp
vanilla extract
dried fruits
raisins

Instructions
Preheat oven to 180°C.
In a large bowl, whisk oats, nuts, quinoa flakes, pumpkin seeds, salt and cinnamon together.
Add oil, syrup and vanilla. Turn out onto a baking sheet and bake for 15 mins or until golden.
Remove from the oven and toss in the dried fruits (if using) while the granola is still warm.
The granola will dry out and crisp up while it cools. Store in an air-tight container until ready to use.
