Delicious Lemon Poppyseed Muffins
Delius Lemon poppyseed Muffins serve with maple sirup or powdered sugar. + fresh berries.
210 g flour
1 1/2 teaspoon baking powder, 1/2 tsp baking soda, 2 tbsp poppy seeds, pinch of salt
2 eggs or egg replacement
80g-100g sugar, 2 tablespoons lemon juice, zest from a lemon, 100 g melted butter, 200 ml vegetable milk or kefir
Preheat the oven to 180 degrees. Line a 12 cup muffin tin with muffin liners. Mix all dry ingredients.
Mix all wet ingredients together.
Stir both together, but don`t over mix.
Divide batter evenly between the 9 -12 prepared muffin cups.
Bake in the oven on the middle rack for 18-20 minutes or until test comes out clean. Let cool on a grid.
Use egg replacement, like apple sauce oder flax egg
