Ingredients
2onionsmedium sized
2clovesof garlic
230gred lentils
700gpotatoesdiced
1can of tomatoeschopped (400 g)
650mlvegetable brothmaybe more
1 1/2tspgaram masala
1tspchili powder
1tspgingergrated
1tspturmeric
1/4tspcumin
2tbspof ghee or coconut oil/ olive oil
green peasfrozen
100mlcoconut milk
Rice for 4 people

green paprika
parsley
Instructions
Finely chop onions and garlic fry in ghee and add spices.
Add lentils, potatoes, tomatoes and vegetable stock and bring to a boil. Reduce heat and simmer gently for 30-40 minutes. Stir again and add more broth if needed.
Cook rice according to the package instructions.
Wash cilantro.
5 minutes before serving, stir the peas and coconut milk under the masala.
Notes
Serve the lentil masala with rice, fresh cilantro and bread.
