Green honshu soup

This green honshu soup is very fine and consists of fresh, barely cooked ingredients.
This preserves many vitamins and nutrients.

  • 0.5 l of water
  • 1 tsp sesame oil
  • 1 tbsp sunflower oil
  • 1 tbsp miso paste
  • 3 tbsp soy sauce
  • 40 g fresh spinach leaves
  • 200 g smoked tofu
  • 125 g rice noodles
  • 2 green (spicy and lonpeppers
  • 1 half cucumber
  • 200 g broccoli
  • fresh coriander
  • salt


  • Pour noodles and broccoli with boiling water and let it grow for 10 minutes.
  • Clean all other ingredients. Dice tofu.
  • Mix miso paste with hot water, add soy sauce and maybe salt.
  • Peel cucumbers and sauté in the two kind of oils. Remove the cucumbers, then add the miso sauce and remove from the heat.
  • Put all ingredients of the green honshu soup in a bowl and pour over the hot broth.
