Preheat the oven to 180 ° C and grease a loaf pan or line it with baking paper.
Mash the bananas with a fork to a fine purée and place in a bowl. Mix with milk, sunflower oil, vanilla and apple cider vinegar.
Mix the flour and coconut flour with the baking powder and baking soda, fold into the banana mixture and stir only until a homogeneous dough is formed. Then fold in the cherries (set aside 2 tablespoons).
Pour the batter into the loaf pan and cover with the remaining cherries. Finally sprinkle with brown sugar and bake for 40 minutes.
Test with a wooden stick whether the cake is ready.
Let cool in the mold for a few minutes and then leave to cool completely on a rack.
