Divide cauliflower into florets. Chop the onions and garlic finely and fry until soft in olive oil. Don't let it brown. Add the cauliflower and bay leaf and deglaze with white wine. Fill up with the vegetable stock and simmer for 20 minutes with the lid closed.
Remove the bay leaf and add the soup into a blender and blend until everything is smooth and creamy. Put back in the saucepan, add the cream and some water if needed. Season with salt, pepper, grated nutmeg and (lemon juice).
