Place the herbs, spices, oil and vegetables in a large saucepan and fry for 10 minutes over medium heat. Stirring occasionally.
Add tomato puree and sauté for 3-5 minutes. Add vegetable broth, tomatoes, rice and beans. Bring to the boil, reduce the heat and then simmer for 30-40 minutes on a medium heat. Stirring from time to time, so the rice doesn´t burn on the base of the pan.
Season with salt and pepper and serve with fresh basil, parsley and drizzle of olive oil. Who likes sprinkle of grated cheese.
