Green and yummy Matcha Ice Cream with Caramel Chunks

Ingredients
250gsoy milk
250gcreamy coconut milk from a can
110gof sugar
5gmatcha powder
5soft caramel candiesvegan
Instructions
Put the soy milk, coconut milk and matcha powder in a measuring cup and puree with a hand blender. Pour into a saucepan and bring to the boil while stirring. Then let it cool down in a cold water bath for about 15 minutes.
Mix the sugar with the locust bean gum and guar gum. Then use the hand blender to mix the sugar into the mixture. Now put in the refrigerator for 2 hours.
Then place in the ice cream maker for 35 minutes.
Just before the end of the freezing process, add the chopped caramel candies. Enjoy asap or free for 3 hours.
