Spicy Quinoa Jackfruit Curry

Hello dear ones, I’m really in the mood for something spicy again, because it’s pretty hot outside and we know that something sharp always helps. I also want something light and colorful.

Quinoa is healthy and has just 350 kcal / 100g. It is a great protein donor.
The jackfruit in the semi-dried state in which I use them has a spicy aroma. The rest of the delicious vegetables complete the meal. Herbs and spices serve as always the individual touch.

Quinoa Jackfruit Curry

INGREDIENT LIST FOR QUINOA JACK FRUIT CURRY:

150g jackfruit, 175g quinoa, 1 onion, 1 clove garlic, 20g ginger, lemon, peanut oil, salt, pepper, turmeric, pepperoni, 1 bay leaf, coriander, parsley, 4 carrots, 2 small Peppers and water

METHOD:

Fry quinoa with chopped onion and garlic in peanut oil.
Add pepper, turmeric and the chopped ginger.
Pour approx. 250ml with hot water. Simmer for 5 minutes.
Then add finely chopped ginger, carrots, jackfruit, pepperoni and bay leaf. Simmer for another 5 minutes.
Finally, add the sliced peppers and the weighed herbs.
Remove from heat after 5-10 minutes. Salt.

It may be that you have to pour some hot water in between.
So have fun and a good appetite with the quinoa-jackfruit curry.
