December is already there. It`s running so fast. I can still remember the warm sunshine and your outdoor swimming. And before you know it, put it in warm boots and pull the scarf almost over your eyes to keep warm.
The good thing in the cold season, you (with me I mean) can eat more. Just to consume the idea at + 30 degrees pancakes, cake, hot chocolate is a bit strange. For this I will then possibly express myself in the summer again. Haha.
But on to the pancakes. They are really awesome fluffy; hmm i have the feeling of being fluffy is my word 2017. fluffy crepes, fluffy pancakes, fluffy donuts, hahaha. Everything is fluffy.
I also made the pancakes with blueberries or raspberries. But with apple or persimmon they taste best to me personally.
My favorite fluffy Pancakes with Aquafaba
- 1 cup chickpea water Aquafaba
- 2 tbsp Soy Quark alpro
- 2 tbsp Sugar
- 125 g spelt flour
- 1 tbsp baking soda
- 1/2 persimmon or apple chopped
- In a large bowl add aquafaba and beat liquid until stiff.Mix quark, with sugar and vanilla.
- Add flour and baking powder.
- Now add aquafaba and at least add the persimmons or apples under the dough.
- In a large pan add oil and fry the pancakes golden.
For frying I use sunflower oil, you can also use coconut oil.
The pan does not heat so much, then it hardly smells like frying fat. Because I’m not on it.
I’m not the biggest fan of coconut oil because it’s 90% saturated fat and it’s low in vitamins. Especially the saturated fat is not really healthy. Therefore, I prefer to use vegetable oils that contain unsaturated fats.
In my opinion, the coconut oil is made too hype, especially in this day and age. Just because it’s offered and advertised everywhere does not mean it has to be healthy. Better grab the good old sunflower oil and do something good for the environment. Because the coconuts do not come just around the corner. And as you know, it’s always about the love of money and with the “nut” can certainly make a lot of it.
HOW IS YOUR HONEST OPINION ON COCONUT OIL? HYPE? MONEY MACHINE? OR wonder agent?
