These crispy Quinoa Sweet Potato Patties are healthy and delicious. You can use the patties also as burger patties or you enjoy it with a big colorful salad.

1small sweet potato
110gof colorful quinoa
1spring onion
1handful parsley
2eggs from happy chickens size. S

2tbspof yeast flakes
1/2tspGaram Masala

Anleitungen
Wash quinoa and place in a saucepan. Cover with plenty of salted water and simmer gently for 20 minutes.
Put in a sieve and drain well.
Roast the sweet potato in the oven until soft, or place it in water and cook in the microwave for about 5-6 minutes.
Chop parsley and onion roughly and place in the food processor. Sweet potato peel and cube.
Add eggs, spices, 3 tbsp of quinoa, sweet potato, ginger, yeast flakes and oil. Now mix with the pulse function to a pulp. Put in a bowl and mix with the remaining quinoa and breadcrumbs.
Keep cool for 20-30 minutes. Should the mass be too moist add more breadcrumbs. But the mass shouldn't be too dry. Sometimes make a test pattie and bake, so you can quickly see if the consistency right.
