Healthy and fast? YES. I am often asked for simple and healthy recipes which are also fast to make. Between work and free time today, unfortunately, the nutrition often falls by the wayside. With my 20 – 30 minute recipes you have a fast and healthy meal, which can also be seen in the lunch box. This fast Mediterranean pasta salad contains everything you need: vitamins, fiber, healthy fats and carbohydrates.
- 250 g penne
- ¼ cup olive oil
- 1 tablespoon of lemon juice
- 1 tablespoon of pasta water
- 1 tablespoon vinegar
- Salt + pepper
- Basil and parsley, chopped
- ½ cucumber, halved and finely chopped
- 10 olives, quartered
- 8 cocktail tomatoes
- ½ avocado
- ½ pink onion, finely chopped
- Basil leaves
- Cook the pasta according to the package instructions.
- Mix the dressing ingredients.
- Drain the pasta well.
- Mix all ingredients in a large bowl and serve with more fresh basil.
For your lunch box, add extra chopped salad leaves.
