After a cup of coffee and a pretzel, Ramin and I go over the farmers market together and put every treat that crosses our path into our basket. Cauliflower, carrots, parsley, dill, local apples and sweet juicy golden yellow pears.
Since this year I have become a real pear fan and don´t get enough of them. On top of that, they are also super healthy, rich in vitamins and contain the important mineral boron. This is relevant for the organism to store calcium. So grab the pear more often. At home I make lunch.
Since today is a late summer day and the sun is still shining from the sky, there is something light for lunch today.
Cauliflower Carrot Patties
INGREDIENT FOR CAULIFLOWER CARROT PATTIES
3 carrots, grated
4 tbsp rolled oats
2 tbsp chickpea flour
3 tbsp breadcrumbs
1 onion, finely chopped
1/4 tsp garlic powder or fresh 1/2 clove garlic (grated)
1/2 tsp turmeric
Divide cauliflower into florets and cook until soft.
Add remaining ingredients + cauliflower into a Moulinex / Mixer and mix. If the consistency is too soft, add more rolled oats.
Put in a bowl and let rest for 10 minutes.
Heat the oil in a pan and sauté golden from both sides.
Serve with fresh cucumber-dill salad.
