Hello everyone, today I’ll tell you my favorite breakfast recipe which I’ve been crazy about lately. My Bircher muesli. Not really something new, but super yummy and super healthy. And somehow it’s always something different than other recipes. In any case, I hope you enjoy it. I prefer to put all the ingredients in a slightly larger bowl so it can be mixed better the next day and it does not overflow. Because often I always reach for smaller bowls.
I mostly start rubbing the apple and add the remaining ingredients. Do not worry about the liquid that gets absorbed by the oatmeal and seeds. The amount is enough for about 3 portions and keeps very well in the fridge. The yoghurt gives Bircher muesli creaminess. You can use soy yoghurt, Greek yogurt or 3.5% fat yoghurt. I mostly make the 3.5% fat yoghurt in my Bircher muesli. If 4 tbsp should not suffice, just add one more or some “milk”. Serve with fruits and nut butter.
- 70 g of rolled oats
- 300 ml of plant based milk
- 1 tbsp chia seeds
- 2 tbsp of flaxseed
- 1 tbsp almonds, chopped
- 1 tbsp maple syrup
- 4 tbsp of yogurt
- Raisins, optional
- 1 small apple grated
- Rub the apple in a bowl and drizzle with a little lemon juice. Add rolled oats, chia, linseed, cinnamon, almonds, sunflower seeds and mix with milk and maple syrup.
- Let it soak overnight.
- The next morning stir in the yoghurt and possibly a little milk.
- Serve with berries and nut butter.
